Well it has once again been quite some time since my last post, I blame Organic Chemistry. It is a super interesting class, but it requires much more time than I have. I haven't been able to work out every day, but this blog wasn't created to make sure I followed my plan every single day. It was created to make sure that I always got back on track even if it took a couple days (or weeks) to do it. And that's exactly where I am at now, making sure I am back on track with my health as this term is coming to an end.
Because of how hectic it has been, I haven't gotten the chance to put up any new posts, but I took pictures every time that made a meal I thought would be a great addition to the blog, so I'm going to do a quick review of these meals.
My amazing boyfriend Zane lives two hours away from me, but thankfully he's willing to make the drive here quite often on weekends, even though half the time I have to leave him to go to work. A couple of weeks ago we made green eggs and ham for breakfast. Yes that's right; just like the Dr Seuss story. I especially loved this breakfast because "Green Eggs and Ham" was actually the first book I ever read. And just like in the book, while they may have looked rather strange and unappetizing, they were actually quite delicious. We made scrambled eggs just like normal; with a little milk and salt and pepper, but then we added pesto to them. We also added garlic, onions, bell peppers and zucchini just to give it that extra green look. We were both pleasantly surprised with the outcome.

I also wanted to share one of my favorite simple breakfasts that I usually have if I have an early day. Oatmeal with brown sugar and fruit. It is extremely cheap, tastes good, and keeps you full until lunch. I just used the plain old fashioned rolled oats that you can buy in the cylinder containers because its the cheapest way to get oatmeal without all the sugars that have already been added to the packaged kinds. I add a little brown sugar or agave and then fresh fruit on top. If you're a chocoholic like I am, then adding some dark chocolate chips to it makes it all that much more perfect. The fruit is the only part that can be costly, so I suggest sticking to common fruit like bananas during the off season, and once farmers markets come around splurge on all the more costly ones once they're in season. My favorite are raspberries!
I also somehow managed to avoid the extreme sickness that passed through all of my roommates. One of them even got up to a temperature of 103.3. I don't know if it was my stubborn determination NOT to get sick or the fact that I was downing vitamin C like no other, but thankfully it passed without claiming me as a victim. One way that I got my vitamin C was through super smoothies, which are my favorite. Zane thinks they're gross, but I'll convert him to my side eventually. For this smoothie I used about a cup of spinach, two or three cuties, some coconut milk, agave and ice. If it's too icy or thick add water to it. This smoothie helps, even if it's just giving you some more nutrients than you would have originally consumed in a day.
And finally, while I wasn't able to work out every day, I found time to have some fun with friends and get some exercise. I went home to Portland the other weekend where Zane and I hung out at Daddies Board Shop with our friend, and got to play around on the ramps in the storage room. Zane is really good at skating and longboarding whether it's downhill, free riding, or the ramps, so it's not surprising that he kicked my butt. He was pretty cute showing me up, but for my first time I did pretty well, I also got a giant bruise on my hip to prove I was trying my hardest. I had a blast doing it, and it was a great workout! I was sore for days, and not just from the bruise, my abs were probably the worst.
I think it's important to find things that you enjoy that get you active, if you are simply working out in a gym all the time it can get pretty boring and it will turn into something you don't enjoy as much. Find an activity that you love and that makes you happy, and working out will become so much easier. On the days that you don't have time to go do an activity or even make it to the gym, then I'll do small workouts in my room either right when I wake up or before I go to bed.
