Tonight I made what is probably now one of my favorite dinners. I got to work with squash which I haven't done since I was very little. I was a little worried at how it was going to turn out, but I LOVED it! It's also extremely filling so by the time I got through half a squash I could barely eat the last bite. I got this recipe from Robin's Sweet Confession, and put a couple of my own tweaks on it. Feel free to do the same!
For this recipe you will need:
Acorn Squash
Ground Turkey or Beef
1 Granny Smith Apple
White Onion
Garlic
Salt and Pepper (or your own seasoning for the meat)
Coconut Oil
Brown sugar
Feta (optional)
Set the oven to 400 degrees and cut open the acorn squash. It was my first time working with acorn squash, and at first I couldn't get over how cute and acorn-like it was, but when I tried to cut into it, I realized it's a pain-in-the-butt. I think I struggled with it for ten minutes before finally getting it into two pieces. Once it's cut, scrape out the insides and then coat them with coconut oil and brown sugar. Place them on a sheet pan and bake for an hour to an hour and fifteen minutes or until golden brown on top.

About twenty minutes before the squash are ready put the ground turkey or beef on the stove with diced onions and garlic. Salt and pepper to taste, or use your own seasonings. I used Earth & Sea Salts that I picked up at the Saturday Market, it has a lot of great flavors in it and made the ground turkey taste amazing! I also sprinkled a little brown sugar in the meat to make it taste a little sweeter. Next cut up the apples into bite sized pieces and throw it in to simmer with the meat and allow all of the flavors to mix together.
Finally, place the beef mixture into the squash and serve. I sprinkled a little feta over mine because I have a weakness for feta, but it't totally optional. I hope you enjoy this recipe, I know I am very excited for my leftovers tomorrow!
